As it’s hump day, I wanted to share a quick and easy yet incredibly satisfying recipe I have adapted. Every so often, I come across a “viral” recipe online that piques my interest, and after tweaking this one, I can confidently say I could eat this daily and never tire of it!
I’m sure some of you may have seen it come across your feed as the Carrot Salad or some version of it, and while I tried a few versions, it was more of an appetizer for me than a meal.
I wanted to add more flavour, more nutrients, more joy to it.
As we are in the middle of our summer recipes week, this was a perfect fit as the base of this salad is a large serving of carrots and cucumbers. The combination of seasonal vegetables with superfoods, micronutrients, and a massive punch of flavour creates an impressive nutrient profile for this recipe.
